Brigadeiro Cake





I got this recipe with my sister a day before I made it, I wasn't sure if I should use this because it is a little different from what I am used to, but she insisted saying that was delicious so I decide to give a try. I brought this to my last Cake Decorating class. Turned out being very good :)

Cake ingredients
4 eggs
1 container of plain yogurt
2/3 of this container of canola oil
2 cups of sugar
2 cups of all purpose flour
1 cup chocolate powder
1 Tablespoon  baking powder
1 teaspoon  baking soda
In a blender beat the eggs, yogurt and oil until well combined.
In a bowl sift the sugar and mix the liquid in.
In  another bowl sift the flour, chocolate, baking powder and baking soda, then add the dry ingredients into the egg mixture and mix until just combined.
Cover a 10" cake pan with butter then flour all around make sure you remove the excesses of flour, if possible add a layer of parchment paper at the bottom of the pan to make it easy to release.
Bake at 350F until done, when you insert a wood pick in the middle and it come up clean.
Let it get cold before you remove from the pan and cut in half for the filling.

Brigadeiro
I used brigadeiro as filling as to cover the cake. Usually to make brigadeiro you have to cook it until very thick when you turn the cooking pot on the edge and the brigadeiro goes to one side without stick in the bottom of the pan, this you do to roll the balls this would be the right consistency, but since we are covering a cake and we don't want it to stick and make a mess with the cake crumbs you should not cook until the end, stop cooking when it is thick enough to spread in the cake almost done. To make easier and not take the risk of stick when adding it to the cake you can add the filling into a piping bag and pipe the filling just to make a cleaner job.
I did one more change from the traditional brigadeiro recipe, I add one tablespoon of crème de leite for each can of condensed milk that was used to make the filling.

My secret to make the cake moisture is to add some ginger ale in both parts of the cake using a brush to not use too much and get soggy.











Brigadeiro Ingredients  (for 10" cake I used)
3 cans of condensed milk











9 tablespoon of powder chocolate ( 3 tablespoon for each can, the flavor will depend of the quality of chocolate powder you will be using, I used one from Brazil)











3 tablespoon of butter (1 tablespoon for each can)
3 tablespoon of media crema  ( one tablespoon for each can, you should not use this in case you want to make the ball of brigadeiro, this is used only to be more spreadable)











In a pot add the condensed milk, butter and chocolate, cook until the right consistency when ready wait to get a little colder, mixing very often to not get hard then you add the media crema and whisk until well combined.
You are going to use this as filling and to cover the cake, use chocolate sprinkle on the top to make it nice and beautiful.
